What could be better on for the morning after the big night...here is a very simple recipe from Linda for an Eggs Benedict brunch.

Simple Eggs Benedict
Serves 4
The trickiest part of this dish is timing each component to be ready at the same time! A helper (that would be me, kitchen slave) in the kitchen is a plus for this one. This all comes together fairly quickly... in about 8 to 10 minutes.

4 large eggs
4 slices of Canadian bacon, sautéed in skillet per package directions
4 English muffin halves, lightly toasted and buttered
(you might want to go ahead and have the bacon and muffins prepared before you make the sauce and eggs, or have your helper doing this while you do the sauce and eggs)

Simple Hollandaise Sauce (about 1 cup)
3 whole eggs
4 or 5 tsp. of lemon juice
3 Tbs. of water
6 or 7 Tbs. butter
salt and ground black pepper

Whisk the eggs, lemon juice and water in a mixing bowl until thoroughly blended and pale yellow. In a heavy saucepan, melt the butter over a medium to medium high temperature. Add the egg mixture slowly, stirring continuously until sauce has thickened. Take off of heat as soon as it thickens, and blend in the salt and pepper to taste.

While making the sauce, begin heating the water for poaching the eggs. Fill a skillet with about 1 1/2" of water. Bring it to a rolling boil, then reduce heat (or add a splash of cold water) until water is quiet. Gently break eggs and slide into the water. Simmer for 3 to 5 minutes, or until the white is firm. Lift from the water with a slotted spoon. In the meantime, place a slice of Canadian bacon on the toasted muffin, then add the poached egg. Ladle about 1/4 cup of Hollandaise sauce over the eggs.

A bowl of cut up fresh fruit, and Mimosas (Champagne with a splash of orange juice) are a nice accompaniment to this elegant and delicious egg dish. Enjoy!

What We Thought: This big wine has a brambly, dark fruit nose and a robust, full-bodied palate filled with black pepper tinged blackberry fruit supported by yielding tannins that lead to a smooth finish.
